Crunchy Hemp Granola

Ingredients:

Dries:
4 cups rolled oats (14 oz)
1 1/4 cups shelled hemp seed (6 oz)
3/4 cups shredded coconut (2 oz)
3/4 cups rye flakes (3 oz)
3/4 cup sliced almonds (3 oz)
1/3 cup chopped hazelnuts (2 oz)
1/2 cup shelled sunflower seeds (2 1/2 oz)
1/2 cup sesame seeds (2 1/2 oz)
1/4 cup golden flax seed, ground or milled (1 1/2 oz)

Wets:
1/3 cup safflower oil
1/2 cup honey
1 tsp. vanilla extract
1/2 tsp. ground cinnamon
1/2 tsp. salt

Method:

Preheat oven to 250 degrees. In a large (eight quart) bowl combine the dries, the first eight ingredients, and mix. Whisk together the safflower oil, honey, vanilla, cinnamon, and salt until blended, then pour over the dry ingredients. Mix thoroughly until everything is evenly coated. Put the mixture in a 12"x18"x3" roasting pan. Bake 2 1/2 - 3 hours at 250 degrees, stirring every half hour, or until granola is evenly light brown in color and mostly dry. Let cool completely. Serve with dried fruit of your choice.

Notes: A blender works very well to mix together the honey, safflower oil, and spices.

1 1/4 cups shredded coconut (4 oz)
1 1/2 cups rye flakes (6 oz)
1 1/2 cup sliced almonds (6 oz)
2/3 cup chopped hazelnuts (4 oz)
1 cup shelled sunflower seeds (5 oz)
1 cup sesame seeds (5 oz)
1/2 cup golden flax seed (3 oz)

Wets:
2/3 cup safflower oil
1 cup honey
2 tsp. vanilla extract
1 tsp. ground cinnamon
1 tsp. salt
