Ingredients:
Topping:
1/2 cup shelled hemp seed (2 1/2 oz.)
1 cup rolled oats (4 oz)
1/4 cup firmly packed brown sugar (2 oz.)
1/4 tsp. ground cinnamon
1/2 stick unsalted butter, melted (2 oz.)
Fruit mixture:
1/4 cup firmly packed brown sugar (2 oz.)
2 Tbsp. all-purpose flour
1/2 tsp. ground cinnamon
freshly grated nutmeg to taste
6-8 medium apples, cored, peeled and thinly sliced. (1# 4oz.-1# 8oz. finished weight)
1 1/2 tsp. vanilla extract
1/4 cup apple cider or water
Method:
Butter and flour an 8"x8" glass baking dish. Preheat oven to 350° F.
In a small bowl mix the shelled hemp seed, rolled oats, brown sugar, and cinnamon together. Drizzle in the melted butter and mix well. Let sit to absorb the butter.
For the fruit mixture mix together in another small bowl the brown sugar, flour, cinnamon, and nutmeg. Core, peel an slice the apples and mix them with the vanilla extract and apple cider (or water) in a medium sized bowl. Add the brown sugar, flour, cinnamon, and nutmeg mixture and mix well to coat.
Put the fruit mixture into the prepared glass baking dish, press it down lightly and spread the oat-hemp seed mixture on top. Bake at 350° F for 30 to 35 minutes or until done. Serve while warm.
Notes: This recipe also works well with 1/2 apples and 1/2 pears or all pears.
